Post seeking info on lesser known pears & apples
A few questions for y'all:

1) I'm trying to find info on firmness at maturity, brix reading at maturity, cold storage requirements (pears) and storage life expectancy of several apple & pear varieties. Can anyone direct me to a resource for similar info for some of the lesser-known varieties? I've looked at several sources, both print and online, and can only find info for the supermarket varieties. The varieties I'm trying to pin down are:
- Pears - Warren, Orcas, Rescue, Seckel & Bosc (I've come across wildly conflicting info on Seckel & Bosc, anywhere from 0 chill days to 3 months)
- Apples - Liberty, Enterprise, Pristine, Hudson's Golden Gem, William's Pride, Egremont Russet, Ashmead's Kernel, Roxbury Russet, Golden Russet

2) Regarding Perry pears (e.g., winnal's longdon, yellow huffcap, etc.), would I be correct in my understanding that these varieties are picked ripe, as opposed to picked at maturity and chilled/ripened? Or are they picked at maturity & ripened off the tree? Or some other process? And what firmness & brix readings should I look for?

Thanks in advance for your help.

Most of the apples you list are profiled at Orange Pippin:

At the All About Fruit Show in the fall, they have descriptions of the apples, pears, and other fruits, but you can also taste them and share ideas with others.

Karen usually puts a list of web sites and organizations in the Pome News. Many of those are outstanding sources of info.
